Ingredients
500g cooked turkey breast, skin removed, shredded, cooled
120g baby spinach
1 cup of mixed fresh herbs – mint, coriander, Thai basil, leaves picked off the stems
1 medium mango, peeled, flesh sliced
1 medium Lebanese cucumber, sliced into rounds or ribbons
1 pomegranate, seeds only
¼ cup balsamic vinegar
Method
1 In a large serving bowl toss together the shredded turkey, baby spinach, mixed herb leaves, pomegranate seeds and cucumber.
2 Top with mango slices.
3 Sprinkle with balsamic vinegar.
