Tzatziki dip

Serves 6


1/2 continental cucumber

200g natural low-fat yoghurt*

1 teaspoon minced garlic

Pepper (to taste)

2 teaspoons fresh parsley or mint, chopped

1 tablespoon spring onion, chopped

Cooking instructions

  1. Grate cucumber (with skin on), place in a sieve or colander and drain until most of the liquid has been removed - use a spoon or your hand to push as much liquid out as possible.
  2. Place in a mixing bowl, add all other ingredients and stir to combine. Refrigerate until ready to serve.
