Marija's Easy couscous salad

Serves Makes 4 Serves (267g per serve)


Couscous,uncooked 1 cup

Capsicum,red,fresh,raw 0.5 medium capsicum

Capsicum,green,fresh,raw 0.5 medium capsicum

Onion,mature,red,fresh,raw 0.5 medium onion

Cucumber,lebanese 1 medium cucumber

Herbs,parsley,continental 0.25 cup (chopped)

Nuts,cashew,raw 3 tb

Juice,100% juice,lemon,home squeezed 2 tb

Coles Dijon Mustard Smooth & Mild 2 tsp

Oil,olive,extra virgin 2 tsp

Pepper,black 1 pinch

Water,tap 1 cup

Cooking instructions

1. Combine couscous and boiled water in a large bowl. Cover and set aside for 10 minutes.

2. Allow couscous to cool then fluff it up with a fork. Add the chopped red and green

capsicum, cucumber, and finely chopped onion, cashews and parsley.

3. In a separate small bowl, combine the lemon juice, oil and dijon mustard and mix through

the couscous. Season with pepper and stir the couscous and vegies well until combined.
