Mince,beef,extra lean,baked,no added fat 500g

Oil,olive,extra virgin 1 tb

Tomato puree 700g

Zucchini,green,fresh,unpeeled,baked,no added fat 2 large zucchini

Carrot,regular,fresh,peeled,raw 2 large carrot

Celery,fresh,raw 2 medium stalk

Cauliflower,fresh,raw 1 cup

Capsicum,green,fresh,raw 1 large capsicum

Edgell Red Kidney Beans No Added Salt 290g

Master Of Spices Cumin Ground 15g

Spice,coriander seed 15g

Chilli,powder 5g

Corn,kernels,frozen,raw 1 cup

Rice,brown,cooked,boiled 3 cup

Onion,mature,brown,fresh,baked,no added fat 1 large onion

Cheese,cheddar,natural,plain,reduced fat 30g

Cooking instructions

  1. Cook chopped onion and mince in olive oil.
  2. Add vegies, drained red kidney beans (NB weight in recipe is drained weight of 1 x 440g can) and spices. Cook until vegies are soft.
  3. In the meantime, cook the brown rice in water according to the packet's instructions.
  4. Serve chilli over the brown rice topped with a sprinkling of reduced fat cheese.
