Ingredients
1.5 cup Frozen Shelled Soybean
½ cup frozen pea
1.2 cup frozen carrots
1 egg
1/3 cup wheat germ
1 teaspoon paprika
1.2 teaspoon black pepper
½ tablespoon olive oil
4 teaspoons Worcestershire
2 medium sweet potatoes
6 stalks broccolini
½ tablespoon olive oil
Method
- Bring a large pot of water to a boil, add the frozen edamame and cook it for 5 minutes then add the frozen peas and carrots mix and cook for an additional minute
- Drain the veggies and place in a food processor, leaving little chunks for texture
- Add the wheat germ, egg, paprika, Worcestershire sauce and black pepper in a large bowl, then add the slightly cooled veggie mix. Stir to combine
- Moisten your hand with a bit of water and form 3 large patties. Place on a plate and refrigerate for at least an hour or in the freezer for 20-30 minutes
- Pre heat the oven to 200C
- Wash and dice the sweet potatoes with skin on and toss it with ½ tablespoon of olive oil and bake in a tray until golden brown
- Steam broccolini for 5 minutes, until bright green and tender but still crisp
- Heat the olive oil in a large pan over medium heat, place the veggie patties and cook for 10-12 minutes, turning once carefully to ensure they patties stay together.
- Serve veggie patties with sweet potatoes and steamed broccolini on the side
