500g Mince,beef,extra lean

1 tb Oil,olive,extra virgin 

700g Tomato puree 

2 zucchini,green,fresh,unpeeled

2 large carrot,peeled,raw

2 medium stalks Celery,fresh,raw 

1 cup fresh raw cauliflower

1 large capsicum

I can Edgell Red Kidney Beans No Added Salt 

1 tsp cumin 

1 tsp coriander seed 

t tsp chilli

1 cup corn,kernels

3 cups rice,brown,cooked,boiled 

I large brown onion

30g reduced fat cheese,cheddar


  1. Cook chopped onion and mince in olive oil.
  2. Add vegies, drained red kidney beans  and spices. Cook until vegies are soft.
  3. In the meantime, cook the brown rice in water according to the packet’s instructions.
  4. Serve chilli over the brown rice topped with a sprinkling of reduced fat cheese.
