Ingredients
500g Mince,beef,extra lean
1 tb Oil,olive,extra virgin
700g Tomato puree
2 zucchini,green,fresh,unpeeled
2 large carrot,peeled,raw
2 medium stalks Celery,fresh,raw
1 cup fresh raw cauliflower
1 large capsicum
I can Edgell Red Kidney Beans No Added Salt
1 tsp cumin
1 tsp coriander seed
t tsp chilli
1 cup corn,kernels
3 cups rice,brown,cooked,boiled
I large brown onion
30g reduced fat cheese,cheddar
Method
- Cook chopped onion and mince in olive oil.
- Add vegies, drained red kidney beans and spices. Cook until vegies are soft.
- In the meantime, cook the brown rice in water according to the packet’s instructions.
- Serve chilli over the brown rice topped with a sprinkling of reduced fat cheese.
