Side dish - Rainbow coleslaw salad

Serves 6 as a side dish

Ingredients

2 spring onions, sliced finely

2 sticks of celery, sliced

¼ large red or white cabbage, shredded finely

2 carrots, grated

310 g corn kernels, no added salt, drained

125ml (½ cup) coleslaw dressing, reduced fat*

1 small red or yellow capsicum, seeded and sliced

Cooking instructions

  1. Combine cabbage, spring onions, celery, cabbage, carrot, capsicum and corn.
  2. Mix in coleslaw dressing and mix salad well.
