Side dish - Gorgeous greens

Serves 6 as a side dish


160g (1 cup) peas, frozen

150g sugar snap peas or snow peas, thinly sliced

1 zucchini, 1cm slices

75g green beans, trimmed

200g (1 cup) broccoli, cut into florets

1 tablespoon lemon juice

2 tablespoons olive oil

1 tablespoon honey wholegrain mustard

½ cup fresh mint, parsley and chives, finely chopped

20g flaked almonds, toasted (optional)

Cooking instructions

  1. Steam vegetable until just cooked in steamer or microwave.
  2. Mix olive oil, lemon juice, mustard and herbs together then pour over hot vegetables.
  3. Top with toasted almonds before serving (optional).
