Poached Peaches

Serves 4

Peaches poached with cinnamon and honey. Served with a small dollop of low fat natural yoghurt

Ingredients

2 cups water

1 teaspoon honey or brown sugar

3 cardamom pods, split

1 teaspoon ground cinnamon

4 Peaches, cut into halves with the stone removed

 

Cooking instructions

  1. Into a large saucepan over medium heat add the water, honey/brown sugar, cardamom, cinnamon and peaches. Stir gently until the honey/sugar dissolves, then cover and let simmer for 10-15 minutes, until the peaches go soft.
  2. Remove peaches with a slotted spoon, and allow to cool. Serve with a small dollop of low fat natural yoghurt.

 

Note: you can also use this same recipe to poach pears during winter when peaches aren't in season - just keep them whole and add an extra cup of water.
