Brilliant Baked Eggs
Need an excuse to leap out of bed? Why not try this brilliant new recipe for baked eggs? It is like an old friend jazzed up with spinach, tomatoes, and kidney beans.

Ingredients
1 teaspoon olive oil
2 cloves garlic, minced
1 small onion, finely sliced
150g baby spinach
500g fresh tomatoes, roughly chopped
1/2 cup red kidney beans
4 eggs
8 pieces of wholegrain bread (Toasted)
Method
- In a saucepan, add the olive oil, onion and garlic. Stir well for a minute or two, until the onion becomes translucent. Into the sauce pan, add the spinach, tomatoes, and kidney beans. Bring to a gentle simmer, and allow to cook (covered) for five minutes.
- Pour some of the tomato mixture into ramekins. Gently crack 1 egg into each dish.
- Place ramekins on a baking tray. Bake for 16 to 18 minutes (at 180 degrees) or until eggwhite is just set. Remove from oven & serve with toasts.
