Brilliant Baked Eggs

1 teaspoon olive oil

2 cloves garlic, minced

1 small onion, finely sliced

150g baby spinach

500g fresh tomatoes, roughly chopped

1/2 cup red kidney beans

4 eggs

8 pieces of wholegrain bread (Toasted)


  1. In a saucepan, add the olive oil, onion and garlic. Stir well for a minute or two, until the onion becomes translucent. Into the sauce pan, add the spinach, tomatoes, and kidney beans. Bring to a gentle simmer, and allow to cook (covered) for five minutes.
  2. Pour some of the tomato mixture into ramekins. Gently crack 1 egg into each dish.
  3. Place ramekins on a baking tray. Bake for 16 to 18 minutes (at 180 degrees) or until eggwhite is just set. Remove from oven & serve with toasts.
