Avocado Smash with Coriander Salsa
Avocado smash is a great alternative breakfast or light lunch.

2 slices of wholegrain bread
¼ cup roughly chopped fresh coriander
1 ripe tomato, diced
1 tablespoon lemon or lime juice
½ teaspoon cracked black pepper
- To make the coriander salsa: add the coriander, diced tomato, lemon/lime juice and black pepper in a small bowl, and stir to combine. Add more pepper/lemon juice to taste.
- To assemble the avocado smash: toast your wholegrain bread. Spread with avocado, and spoon coriander salsa over the top. Sprinkle with more black pepper if required.
