Avocado Smash with Coriander Salsa

2 slices of wholegrain bread

1/3 avocado

¼ cup roughly chopped fresh coriander

1 ripe tomato, diced

1 tablespoon lemon or lime juice

½ teaspoon cracked black pepper


  1. To make the coriander salsa: add the coriander, diced tomato, lemon/lime juice and black pepper in a small bowl, and stir to combine. Add more pepper/lemon juice to taste.
  2. To assemble the avocado smash: toast your wholegrain bread. Spread with avocado, and spoon coriander salsa over the top. Sprinkle with more black pepper if required.
